Northern Ireland Main – Mushroom and Guinness Pie

Of course we had to include a recipe with Guinness! For this recipe we used a recipe from the BOSH! book, which we highly recommend getting your hands on. This also means if you’re able to get vegan pastry (or even make your own), this is a vegan-friendly meal too. This mushroom and Guinness pie was delicious and definitely a comforting meal, although it was still surprisingly light.

The first step is of course to make the filling.

Roast the mushrooms in the oven and allow them to soften. Meanwhile pan-fry the onions until soft, then it’s time to combine them together with the Guinness and seasoning. Light brown sugar or muscovado are great for this dish in combination with the soy sauce for a touch of sweetness.

The filling should look rich in colour and be smelling great at this point! Add it to a pie dish, ready to be topped with the puff pastry and baked in the oven.

Once it’s baked and smelling amazing, it’s ready to eat!

This pie was so full of flavour and had an unusual sweetness to it which really made it stand out for us. We’ll definitely be making this again as a comforting winter warmer.
