Bosnia Dessert – Hurmašice

Hurmašice or syrup biscuits are a delicious cross between a cake and a biscuit, drenched in a spiced syrup. The best recipe we found for these were from SBS.

The most important aspect of the hurmašice is the syrup! The best plan is to make this first, so it can be simmering and reducing as you make the biscuits. This was a simple case of combining all the syrup ingredients in a saucepan, bringing to the boil, then taking back down to a very low simmer.

The biscuit itself was formed of the standard cake ingredients, flour, butter, eggs and sugar. The main difference here was the addition of orange zest, which really came through in the final biscuits.

Once the biscuit mixture had formed a dough, we sectioned it into small oblong shapes. To get the shape and pattern on the biscuits, we used the small side of a box grater (not the zest side, the other one!)

Once the biscuits were cooked, we poured on the hot syrup and gave the biscuits time to soak it all up.

As you can see from the above picture, the pattern was not very strong on all of the baked biscuits, but there were a few that looked great!

These biscuits are a treat we will definitely be making again. The strong clove flavour in the syrup made them very different to any biscuits we have had before!
